Level 2 Commis Chef Apprenticeship

Aspire Training Team are offering a unique and tailored Commis Chef Apprenticeship specifically designed for the Early Years and Schools sector. This apprenticeship will focus on the nutritionally balanced diet children need and the recipes and menus that are attractive to them.

Working as a commis chef is a great way of getting started in a kitchen; while it’s the most junior cookery role it provides a means of learning a range of key skills on the job.

A commis chef prepares food and carries out basic cooking tasks under the supervision of a more senior chef. A primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen. This gives you the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired.

Sustainability is a core theme of this apprenticeship including how meals are prepped and learning about the importance of local and ethical sourcing.

Key Responsibilities:

  • Applying correct preparation and selection methods when using meat, poultry, fish and vegetables.
  • Maintaining a clean and hygienic kitchen environment.
  • Recognising risks in the working environment.
  • Developing good working relationships with the team and colleagues.

Knowledge & Behaviours:

  • Food safety & Hygiene
  • Due diligence processes
  • Allergen Awareness
  • Effective Teamwork
  • Kitchen Etiquette
  • Basic Costings & Yields of goods
  • Portion & Waste Control

Cookery Content:

  • Quality points & commodity groupings:
  • Vegetables & Vegetable Proteins
  • Stocks, Sauces & Soups
  • Egg & Farinaceous Dishes
  • Pastry & Dough products
  • Cakes, Sponges & Biscuits
  • Hot & Cold Desserts
  • Fish & Shellfish
  • Meat & Poultry
  • Game & Offal

The learning journey of a chef will vary considerably from one individual to the next; however, it is the range of experiences in the basics gained in this role that provide the opportunities to progress to any future senior chef role.

Your team members will gain hands-on experience in a professional kitchen across Early Years settings, nurseries and schools or smaller set ups such as childminders. They will work alongside the catering manager, ensuring the freshest and best quality produce is available to the kitchen. Your team will build on their knowledge and skills covering techniques such as preparing and cooking stocks, soups and sauces, a variety of dishes and desserts, as well as pastry and baking products. They will also cover vital elements of food safety, customer relations and business as well as gaining Level 1 Functional Skills in English and maths.

On successful completion of the Level 2 Commis Chef Apprenticeship, your team could progress to a Chef de Partie or Senior Chef role.
