Level 3 Chef de Partie Apprenticeship

Aspire Training Team are offering a unique and tailored Chef de Partie Apprenticeship specifically designed for the Early Years and Schools sector. This apprenticeship will focus on the nutritionally balanced diet children need and the recipes and menus that are attractive to them.

The Chef de Partie Apprenticeship provides you with the knowledge and skills required to work in a kitchen as a chef de partie providing good, quality food for children and young people. You will learn fundamental and advanced cookery skills which can be transferred into all sectors of the catering industry, creating seasonal, nutritionally balanced dishes from around the world.

A chef de partie is responsible for running a specific section of the kitchen such as fish, grill, saute or vegetable. Also known as a station or section chef, the chef de partie reports to the senior chef and has a very important role in any kitchen.
In a large kitchen, this type of chef usually manages a small team of workers, which they must keep organised so that dishes go out on time and the work area remains clean and orderly. However, in smaller kitchens a chef de partie may work independently as the only person in their section.
Sustainability is a core theme of this apprenticeship including how meals are prepped and learning about the importance of local and ethical sourcing.

The Chef de Partie is a senior role within the kitchen. You will supervise and oversee the operational running of your section, so the kitchen brigade system runs as smoothly as possible.  Depending on your placement the kitchen sizes will differ, but the principles will remain the same; to teach and lead others whom you work with and to have a holistic approach to the kitchen whilst leading a specific section of it. This apprenticeship would suit any chef who is wishing to climb the ladder and learn more about the qualities required to supervise others whilst developing their own cookery skills.  Explore the full breadth of the menu options whilst working to a high standard in a challenging, time-bound environment.  To learn all aspects of the kitchen, so you can have an appreciation of the diverse needs a supervisor would need to lead the team.

This apprenticeship standard is set at level 3 and will allow you to gain technical knowledge and real practical experience, along with functional and personal skills required for your job and future career in the kitchen. This apprenticeship standard includes completion of Functional Skills at Level 2 in both English & Maths. Progression from this apprenticeship can be into a senior culinary chef role.
